Improvising on ingredients: Spaghetti Squash recipe

So, you’ve found this great recipe on Pinterest. It seems super easy and you have all the ingredients. Except one, of course! What do you do? You improvise, that’s what!

This situation happened to me not too long ago. I picked up a spaghetti squash from the supermarket and I was all set to make my favorite recipe from Pinterest. So I thought….

You can find the original recipe for this yummy spaghetti squash here.

I love this recipe because it is super easy and super quick. Plus it’s a great carb alternative for when I am cutting down on my carb intake.

This recipe calls for

a spaghetti squash
turkey bacon
goat cheese
olive oil, salt, and pepper
spinach- I forgot the spinach so I improvised by using frozen broccoli I found in my fridge tasted just as good.

To make this recipe:

-Cut spaghetti squash in half (long ways) I recommend microwaving the squash for a little because it is really had and doing this will soften it and make it easier to cut.
-Preheat oven to 400 degrees.
-Drizzle spaghetti squash with olive oil, salt, and pepper. Rub to spread evenly. Place spaghetti squash facing down on a baking sheet and bake for 30 minutes.
-While that is cooking in the oven, fry up your bacon and set aside on paper towel to absorb some grease.
-Next sauté spinach or your favorite veggies in a pan.
-When spaghetti squash is fully cooked take out of the oven to cool.
-Use a fork to remove seeds from the squash. Once all of the seeds are removed use the same fork to shred the squash into noodles.

I love goat cheese so for me, this is a lot! 😉
