Zucchini Spaghetti

I love this next recipe for when I am trying to cut carbs. It fills my craving for pasta and takes only minutes to make, so it’s perfect for busy weeknights.

To make this dish you will need the following

Zucchini – I ended up using four small ones


1 can of diced tomatoes
1 tsp. of parsley
1 tsp. of crushed red pepper
2 tbsp. of minced garlic
1 tbsp. of olive oil

Instructions

Peel zucchini into thin strip using vegetable peeler 

Use paper towel to squeeze out excess water

Heat minced garlic and olive oil in skillet for 3 minutes 

Add zucchini noodles and remaining seasoning and cook until tender 

Stir in tomatoes and cook for another 2 minutes

The great thing about this recipe is you can add whatever ingredients you would like, more veggies or a protein like sausages or meatballs. I added my favorite frozen turkey meatballs because they’re quick and tasty.
